Warm Potato Salad

  • 4 large white potatoes, 1 inch dice
  • 1/2 C shallot, minced
  • 1 garlic clove, minced
  • 1/4 C fennel fronds, roughly chopped
  • 7 dashes smoked Tabasco sauce
  • 1 tsp sriracha sauce
  • 1-2 tsp prepared horseradish
  • 1/2 C whole grain mustard
  • 1/2 C mayonnaise
  • Koasher salt
  1. Bring a large pot of water to the boil, season water with salt (water should be salty like the sea). Boil potatoes until a fork can easily pierce through them.
  2. Drain potatoes and immediately stir in remaining ingredients.
  3. Allow to rest a few minutes so acids can be absorbed by potatoes.
  4. Can be served hot, warm or room temperature.
